*3  Observed the following potentially hazardous foods to be improperly cooled. Pulled pork was found in stand-up cooler at 154F cooling with plastic covering container. 2. Roast beef was found in walk-in cooler at 77F with plastic covering it. 3. Vegetable soup was found at 45F in walk-in cooler. Make sure there is no lids or plastic covering food when in the cooling process. Potentially hazardous foods shall be rapidly colled, utilizing such methods as limiting depth of food to 4 inches or less, agitation, quick chilling or water circulation external to the food container. 750.120 Immediate/Onsite
Observed no thermometer to be available in the following units. There was no visible thermometer for the milk cooler. Provide for an accurate, conspicuous thermometer, that is accurate within +/- 3°F, to be available in all units holding potentially hazardous foods. 750.140 Next Inspection
14  Observed the following improper food contact surfaces. Rusty utensil found in very back prep area by walk-in cooler. Remove all rusty utensils from the kitchen.
